MAKE - Vegan Margarita Cupcakes!
What do you do when your baking some cakes for a party, some of your friends are vegan and you want to make something naughty? You bake...
I've never baked vegan food before and was looking for a recipe that was easy, as I'm not the best cook, and I found this great recipe on The Hostess Blog. This recipe is written in American units so I've changed it a little bit for us Brits, its easy, simple and very very tasty! (and there's tequila in it! Bonus)
These are your main ingredients:
There's 2 parts to this recipe, the wet and dry ingredients. Here's the dry ingredients list:
200g of sugar
275g of plain flour
1/4 tsp of baking soda
1/2 tsp of baking powder
1/2 tsp of salt
Mix these together.
The wet ingredients are:
4 tbsp of lime juice
1 1/2 tsp of lime zest
245ml of soy milk - I used unsweetened
4 tbsp of vegetable oil
2 (and a bit) tsp of tequila
1/2 tsp of vanilla extract
Mix these all together.
Mix the wet and dry ingredients together.

Now fill the cupcake cases about 2/3 full and your ready to bake. Bake in a 180c for 20-22 mins.
I couldn't believe how well they came out! Very yummy! Now its time to make the frosting!
60g of soya butter
1/2 tbsp of soya milk
2 tbsp of lime juice
1 tbsp (and a bit) of tequila
1/2 tsp of lime zest
LOTS of icing sugar! I used 500g but this is too much!
When the cakes have cooled drip the frosting on top and I tend to sprinkle everything with glitter so there you go!
